Bruegger's Bagels boils and bakes around 400 bagels a day, but nowadays it's the salads, paninis and non-traditional cream cheese flavors that customers crave. The tarragon chicken salad sandwich, for instance - made from scratch every morning and served on bread or a bagel with almonds and cranberries - is a new fave. "That flies outta here," says Tammy Gasbarre-Hammer, general manager for the New Haven store. Grilled panini sandwiches are all the rage too these days, with the turkey, Toscanni and primo pesto varieties leading the pack. As for cream cheese, plain, onion-chive and honey-walnut are most popular, Gasbarre-Hammer says. "We have a lot of regular customers and every day they tell you about their family. They are one great bunch of people!" Look this summer for new salt bagels, and Brueggerchinos, a new frozen coffee drink coming in regular and mocha flavors.
